A yummy recipe for those chilly nights and for the runny nose.
In case you missed that, here’s the step by step:
In a boiling pot of water add the following (while pot sits in on medium high):
Cut some chicken into 1/4 bite size pieces
Chop up some carrots (I use as much as I can since my youngest devours them with this recipe)
Slice half a large white onion into 1/4 slices, break the layers independently into the pot
Cut off the zucchini ends, cut long ways in half, and then chop into 1/4 bite sizes (I used 5 zuchinnis since these are large and the littles also love it in this recipe)
Grab 3 tomatoes, cut in halves, cut in halves again, and then slice into 1/4 slices
Mince some green onions and cilantro (don’t be afraid to be a little generous)
Peel and crush 4 cloves of garlic
Cover pot and lower heat to low medium heat. Let soup simmer, covered but occasionally stirring, for approximately 10-15 minutes.
My personal favorite is to squeeze some lemon into my bowl. Yum!
